Tasty Treat Thursday: Depression Peanut Butter Bread

I was elated when I recently went on a shopping trip and I found a product I hadn't seen in weeks.

No, it wasn't toilet paper—although that does seem to be more plentiful than it had been.

It was baking yeast!

Now, this recipe does not call for yeast because when I initially set out to try it, I couldn't find it anywhere.

If you’ve been paying attention to the internet lately, you’ll see that making bread is a pretty popular pastime for those stuck at home (and because the sliced bread aisle can be one of many that are cleared out). This recipe from the Great Depression is wonderful because you only need a few simple ingredients—and yeast isn’t one of them! (Thanks to Buzzfeed for sharing it).

The bread also comes out absolutely incredible and fills your house or apartment with the most amazing aromas of melted peanut butter and cinnamon. OK, let’s dig in!

The ingredients:

• 2 cups flour

• 4 teaspoons baking powder

• 1/4 cup sugar

• ½ teaspoon salt

• 1/2 cup peanut butter

• 1 and ⅓ cup dairy-free milk

• A bit of cinnamon sugar for dusting

• Optional: 1/2 a bag of chocolate chips

  1. Preheat the oven to 350 degrees F.

  2. Mix together all of the ingredients above, starting with the dry ingredients and moving to the wet ingredients. Then add the chocolate chips.

  3. Pour into a greased bread pan

  4. Dust with a bit of cinnamon sugar

  5. Bake on the center rack for about 1 hour (I found it was slightly less) until a toothpick inserted into the middle comes out clean
